veggie chowder

This was a hit at my house a few nights ago. It comes together in about thirty minutes, especially if you crisp up the bacon while the veggies are cooking.  I served with a piece of crusty, toasted bread topped Gruyere cheese. YUM

I know: you just read "bacon" and "Gruyere cheese" and might be out.  But each cup is around 200 calories and the quantities of the bacon and cheese are small.
